Ethiopia is where Coffea arabica comes from, and it is also the only major producing country where the crop still grows wild in forests rather than existing purely as a planted field crop. That single fact changes the way everything downstream is organised: the geography produces the names, the names carry the grade, and the grade is the only part of the chain that a buyer can verify from a document.
Reading an Ethiopian label means holding three separate maps at once — an altitude band, an administrative boundary, and a defect count. The sections below set out each one with the figures attached to it, so a regional name stops functioning as a mood word.
The altitude band and the four growing systems
Ethiopian coffee is grown largely between 1,500 and 2,200 metres above sea level, and the way the crop sits in the landscape is normally split into four systems: forest coffee, semi-forest coffee, garden coffee and plantation coffee. Forest coffee is harvested from naturally regenerating trees in the south-west, in the Kaffa, Sheka and Bench Maji forest belts. Garden coffee is what most smallholders grow, planted around the homestead in the densely populated zones of Sidama, Gedeo and Guji, in plots that are usually well under a hectare. Plantation coffee is the smallest share and the most uniform in management.
The split matters when a bag carries no farm name. Forest and semi-forest lots come from mixed-age, shade-heavy systems where the harvested material is genetically heterogeneous by default; garden lots come from a plot a family manages daily. The systems are named in the national industry literature rather than in a regulation, which is why they describe growing conditions rather than certify anything about a specific lot.
Regional names and the administrative map
Most of the names on a bag are administrative units, not flavour descriptions. Sidama became a full federal region on 19 June 2020 after a referendum, and the names Sidama and Sidamo refer to that territory. Yirgacheffe is a woreda — a district — inside the Gedeo Zone, and coffee sold under that name is grown there rather than across the south generally. Guji is a zone in Oromia to the south of Gedeo; Harar coffee comes from the eastern highlands around Harar and East Hararghe, and Limu, Jimma, Kaffa and Illubabor cover the western and south-western growing areas.
The practical consequence is boundary drift. When a zone is upgraded — as Sidama was in 2020, and as earlier reforms redrew the Gedeo and Guji boundaries — the same physical slope of coffee can appear under a new administrative heading. A washing station near a border tells you more about where the coffee grew than a regional name that has moved since the station was built.
The grading system: what separates Grade 1 from Grade 2
Ethiopia grades its export coffee by counting full defects in a 300 g sample under the national export classification rules. The tightest band, Grade 1, allows up to 3 full defects in that sample; Grade 2 allows 4 to 12. Both top grades are sold as specialty under the exchange system that has handled the country's export trade since the Ethiopia Commodity Exchange opened in 2008. Grade 3 and below allow progressively more defects and move into commercial pricing.
The washed and natural tracks were historically graded on different floors: naturals could reach the top grades only after the exchange's quality rules were revised, which is why older Grade 1 naturals are unusual and current ones are not. Defect counting is the only part of the score that a sample can reproduce, since it rests on a fixed sample weight and a published list of what counts as a full defect.
Production, consumption and exports in outline
Ethiopia's crop is overwhelmingly smallholder-grown and most of it is drunk at home, which decouples export volume from any single harvest. A total assembled from smallholder plots does not change size because one new plantation appears, and a large domestic market can absorb a poor export price rather than force a sale.
That is why the national production figure and the national export figure move for reasons of their own. A country total for a given marketing year describes the market at that scale; what it does not describe is any individual farm, washing station or lot.
The gene pool behind the names
Arabica's centre of origin is the Ethiopian highlands, and wild populations still grow in the south-western forests. The Kaffa forest landscape there is protected as a biosphere reserve, and wild arabica is one of its conservation targets. Beyond the forest, an unusually large number of locally selected lines are in circulation; the Jimma research selections numbered 74110, 74112 and 74158 are the best-known examples, and they are what a bag usually means by the term heirloom variety.
A landrace name on a bag therefore does not identify a single cultivar in the way Castillo or Caturra does in Colombia, or Mundo Novo in Brazil. It signals that the seed comes from a population rather than a registered release, and populations differ from field to field even within one district.
What a name on a bag can and cannot establish
A regional name establishes a growing territory and nothing else. Yirgacheffe narrows the coffee to the Gedeo Zone; Sidama to the region that took that name in 2020; Guji to the zone of that name. The grade establishes a defect count in a 300 g sample. Neither tells you the altitude of the specific plot, the drying method used after harvest, or the variety, because none of those are recorded on the export document.
Where the two do combine usefully is in narrowing the shortlist. A Grade 1 washed lot from a named district in Gedeo, a Grade 1 natural from Guji and a semi-forest lot from Kaffa occupy three genuinely different positions on the shelf, and the defect count is the one part of that description a buyer can check by sample. The rest is a conversation with the exporter.
