Before coffee could become a habit it had to become a timetable. On the São Paulo plateau the crop came down to the coast from 1795 over the Calçada do Lorena, a paved mule track across the Serra do Mar; from 1867 the Estrada de Ferro São Paulo Railway lowered it to Santos in roughly four hours. Across the Atlantic, a sailing packet out of New York in the 1820s logged 21 to 29 days to Liverpool, and steam began revising that number within a generation. The twentieth-century cup — poured at a counter, carried into a factory, pasted into a ration book — sits on top of those two bottlenecks: the landward haul and the sea passage.
What follows traces that chain in the figures its own operators recorded: metres of quay built at Santos, days logged between ports, bags of green coffee counted by the International Coffee Organization, and the point-stamp arithmetic that governed American kitchens in the 1940s.
Rail and port: getting the crop to the water
Santos grew out of rudimentary anchorages, and for most of a century the practical inland route was the Calçada do Lorena, the first paved crossing of the Serra do Mar, which carried coffee-bean exports from 1795 and remained the plateau's principal link to the coast for almost 70 years (Autoridade Portuária de Santos). In 1859 Barão de Mauá and a group of businessmen persuaded the imperial government to build a railway between São Paulo and the port. The obstacle was the escarpment itself: an 8-kilometre stretch climbing some 800 metres, then considered impracticable. It took a little under eight years, and the Santos–Jundiaí line — the São Paulo Railway — opened in 1867, cutting the run to the docks to about four hours.
The quayside followed the rails. A 90-year port concession was tendered in 1888; the Companhia Docas de Santos was created with the concession term signed on 7 November 1890, and on 2 February 1892 the first 260 metres of quay opened as Brazil's first organised port, taking the English vessel Nasmith alongside. Power for the docks came off the same escarpment: in 1901 Gaffrée & Guinle won authorisation for the Itatinga hydroelectric plant, built 30 kilometres from the port and inaugurated in 1910.
Passage times: the sail-to-steam hinge
Scheduled shipping itself became a measurable thing in this period: Lloyd's List, the London paper that tracked arrivals, has surviving issues from January 1741 and went daily in 1837 (Royal Museums Greenwich, Caird Library). Arrival times set the outer limit on how fresh, how cheap and how predictable coffee could be in a consuming city.
For the sailing era the numbers are blunt. Drawing on Square Riggers on Schedule (Princeton University Press, 1938), Royal Museums Greenwich gives New York–Liverpool packet crossings of 21 days (fastest) to 29 days (slowest) for the years 1818–1832. Over roughly 3,000 miles that is 100–140 miles a day, about 4–6 knots. From Ocean Passages for the World (Hydrographic Department, 1895), the same archive records a typical New York to English Channel passage of 25–30 days for a well-found sailing vessel of about 2,000 tons, logging 100–150 miles a day.
Steam arrived by steps rather than one leap. William Symington launched the first practical steamboat in 1788, using a Watt engine, and followed it with the Charlotte Dundas on the Forth and Clyde Canal in 1803; the Clermont began a regular New York–Albany passenger run in 1807; Henry Bell's Comet, built on the Clyde in 1811–12, was Britain's first genuinely commercial steamboat; and in 1816 the Margery crossed the English Channel and steamed up the Seine to Paris, which the museum dates as the start of international travel by steam vessel (Royal Museums Greenwich, Caird Library).
The last great generation of long-haul sail was already racing a timetable that routing could overturn. Cutty Sark was launched on 22 November 1869 and left London for Shanghai on 16 February 1870, returning with 1.3 million pounds of tea; between 1870 and 1877 she carried close to 10 million pounds of tea. The museum records that the opening of the Suez Canal in 1869 ended sail's dominance in that trade — the same routing logic that would reorder how bulk agricultural cargo reached consuming markets.
Rationing and the routine cup
By the 1940s the beverage had become something governments allocated like fuel. During the Second World War the United States Office of Price Administration issued ration books for foods in short supply; the National WWII Museum notes that imported foods "like coffee and sugar" were limited by restrictions on importing, and that more than 8,000 ration boards across the country administered the programme. The paper machinery was heavy enough that a Gallup poll of 5 March 1943 found 53% of men — and 76% of women — answering yes when asked whether they understood how food point rationing worked.
That is the point at which coffee stops being only a traded commodity and becomes an administrative unit of the day. Institutions had been organising around the same idea for longer: the National Coffee Association was founded in 1911, and by 1922 the standard American trade manual of the period, William H. Ukers's All About Coffee, devoted a chapter to production and consumption statistics and another to the mechanics of moving green coffee to market — the two ledgers that turn a crop into a daily supply (Ukers, 1922, pp. 273, 303).
The counting house: what the trade measured
Between Ukers's 1922 survey and the present, the trade's accounting has shifted from trade-press compilations to intergovernmental statistics. Ukers's chapter XXII was assembled around per-capita figures for the leading consuming countries, a comparison with tea consumption in the United States and the United Kingdom, and a review of the 1921 American trade (p. 273); chapter XXIII covered transporting coffee to consuming markets and record cargoes shipped to the United States (p. 303).
The modern equivalent comes from the International Coffee Organization and the USDA. For coffee year 2024/25 the ICO put global green-bean exports at 121.16 million bags, down 0.9% from 122.21 million bags in 2023/24, with world production of 177.5 million bags (up 5.2%) and consumption of 175.1 million bags (up 1.4%), of which producing countries accounted for 57.7 million. Its August 2026 market report estimated 2025/26 world production at 183.6 million bags, up 4.4%, and recorded July 2026 green-bean exports of 10.76 million bags. On the consuming end, the USDA's Foreign Agricultural Service reported in July 2026 that United States bean imports for coffee year 2025/26 stood at 23.1 million bags, revised down by 700,000, inside world bean imports of 118.6 million bags; the same release forecast 2026/27 world production at a record 189.7 million bags and global consumption at 179.7 million.
Set against 21-day packet crossings and a four-hour descent to the quays, those bag counts are the present-day measure of the same chain — a supply system whose scheduling and bookkeeping now run at a scale of hundreds of millions of bags a year.
